Ingredients
  • 4 large egg whites
  • 290 g (1+ 1/2 cups ) caster sugar
  • 390 g (1 3/4 cups + 1 tbsp) unsalted soft butter
Instructions

    Combine the egg whites and sugar in a heatproof bowl.

    Place the bowl over a bain-marie (a pot of simmering water) and heat the mixture, whisking constantly until it reaches about 60°C and the sugar has fully dissolved.

    Remove the bowl from the heat and continue to whip the mixture with a hand mixer until it cools to about 30°C and forms a glossy meringue.

    Gradually add softened unsalted butter, whipping continuously until the buttercream becomes smooth, fluffy, and light in texture.
