Step 1:

  1. In a bowl, add 245 g of flour. Sift in 13 g of powdered sugar, 3 g of baking soda, and 2 g of baking powder. Mix the dry ingredients well.
  2. Next, add 35 g of vegetable oil and 135 g of Greek yogurt. Gently mix with a spatula until the ingredients are slightly incorporated, then knead by hand until you get a smooth dough.

Step 2: Resting the Dough

  1. Wrap the dough in plastic wrap and let it rest in a cool place for 10 minutes.

Step 3: Rolling Out the Dough

  1. After the 10-minute rest, roll out the dough on a lightly floured surface until it's about half a centimeter thick. Use a cup or an 8 cm round cutter to cut the dough into circles. Gather the dough scraps, form a ball, wrap it again in plastic, and let it rest for 20 minutes before rolling and cutting again.

Step 4: Filling the Cookies

  1. Place a teaspoon of Nutella in the center of each dough circle. Close the dough carefully by pressing the edges, ensuring the Nutella stays inside and doesn’t leak during baking.

Step 5: Freezing and Baking

  1. Place the filled cookies in the freezer for 30 minutes. Meanwhile, preheat the oven to 180°C (350°F). Once the cookies are chilled, bake them for 7-8 minutes.

Note

Storage: Store these cookies in an airtight container for up to three days at room temperature. For longer storage, freeze the baked cookies in a sealed container for up to two months.

Substitutions: You can swap Nutella with any chocolate hazelnut spread, peanut butter, or even jam for a fruity twist.

Additional Flavors: Add a pinch of cinnamon or vanilla extract to the dough for extra flavour.

Frequently Asked Questions

Expand All:
Can I make these cookies ahead of time?

Yes, you can make the dough and fill the cookies ahead of time. After filling, freeze the unbaked cookies, and when you're ready to bake, follow the freezing and baking instructions in the recipe.

Can I use a different type of flour for this recipe?

You can experiment with whole wheat or gluten-free flour, but the texture may change slightly. Whole wheat flour will make the cookies denser, while gluten-free flour may require additional binding agents.

How do I prevent the Nutella from leaking out of the cookies?

Make sure to tightly seal the edges of the dough after filling. You can also freeze the cookies for a bit longer to ensure they hold their shape during baking.

Can I add chocolate chips or nuts to the dough?

Absolutely! You can add chocolate chips, chopped nuts, or even dried fruit to the dough to enhance the flavor and texture of the cookies.

How long should I knead the dough?

Knead the dough just until it becomes smooth and uniform. Over-kneading can result in tougher cookies.

Can I use a plant-based yogurt instead of Greek yogurt?

Yes, plant-based yogurts like coconut or almond yogurt can be used as a substitute, though the flavor and texture might vary slightly.
