Make the Apple Insert:
- Bloom 3g gelatin in 15ml cold water and set aside.
- In a medium pot, bring 100g water and 50g caster sugar to a boil.
- Add the juice of ½ lemon and 2 peeled, chopped apples.
- Cook for 2 minutes.
- Stir in the bloomed gelatin until fully dissolved.
- Spoon the mixture into mini silicone molds and freeze until solid.
Prepare the White Chocolate Mousse:
- Bloom 8g gelatin in 40ml cold water.
- Boil 94g glucose syrup with 45ml water to create a sugar syrup.
- Add the gelatin to the syrup, stirring until dissolved.
- Pour the hot syrup over 250g melted white chocolate, mixing until smooth.
- Cool the mixture to 30°C, then fold in 530g semi-whipped cream in two parts.
- Pipe the mousse halfway into large silicone molds, press in the frozen apple insert, and top with more mousse to fill.
- Freeze for 3-4 hours until solid.
Create the White Chocolate Glaze
- Melt 300g white chocolate and mix with 50g vegetable oil.
- Dip the frozen apple-shaped mousse into the white chocolate glaze, ensuring an even coat.
For a dramatic effect, dip the glazed dessert into a red mirror glaze heated to 27-30°C.
