Mirror Glaze Apple-Shaped Dessert Recipe

This apple-shaped dessert features a luscious white chocolate mousse with a hidden apple insert, all covered in a shiny red mirror glaze. It’s a visually impressive dessert perfect for special occasions.

Make the Apple Insert:

  1. Bloom 3g gelatin in 15ml cold water and set aside.
  2. In a medium pot, bring 100g water and 50g caster sugar to a boil.
  3. Add the juice of ½ lemon and 2 peeled, chopped apples.
  4. Cook for 2 minutes.
  5. Stir in the bloomed gelatin until fully dissolved.
  6. Spoon the mixture into mini silicone molds and freeze until solid.

Prepare the White Chocolate Mousse:

  1. Bloom 8g gelatin in 40ml cold water.
  2. Boil 94g glucose syrup with 45ml water to create a sugar syrup.
  3. Add the gelatin to the syrup, stirring until dissolved.
  4. Pour the hot syrup over 250g melted white chocolate, mixing until smooth.
  5. Cool the mixture to 30°C, then fold in 530g semi-whipped cream in two parts.
  6. Pipe the mousse halfway into large silicone molds, press in the frozen apple insert, and top with more mousse to fill.
  7. Freeze for 3-4 hours until solid.

Create the White Chocolate Glaze

  1. Melt 300g white chocolate and mix with 50g vegetable oil.
  2. Dip the frozen apple-shaped mousse into the white chocolate glaze, ensuring an even coat.
  3. For a dramatic effect, dip the glazed dessert into a red mirror glaze heated to 27-30°C.

  4. Refrigerate until fully thawed and ready to serve.
