Prepare the Batter:
- In a jug, blend together the ripe bananas, eggs, and olive oil using a hand blender until you achieve a smooth consistency.
- Pour the banana mixture into a large bowl. Gradually add the wholemeal flour and baking powder, stirring until all the ingredients are combined and the batter is thick and smooth.
Bake the Cake:
- Preheat your oven to 170°C (338°F).
- Grease a loaf tin (450g capacity) with butter or line it with parchment paper for easy removal.
- Pour the banana batter into the prepared tin and bake in the preheated oven for 40 minutes. To check if the cake is baked through, insert a toothpick into the center. If it comes out clean, the cake is done.
- Remove from the oven and allow the cake to cool in the tin for a few minutes before transferring it to a wire rack to cool completely.
Glaze the Cake:
- Melt the white chocolate over a double boiler or in the microwave, ensuring it reaches 29°C (84°F) for the best consistency.
- Stir in a few drops of caramel flavoring, then add yellow liposoluble food coloring to achieve a warm caramel tone.
- Place the cooled cake on a wire rack with a tray underneath, and carefully pour the melted white chocolate glaze over the entire cake, ensuring it drips down the sides.
- Let the glaze set completely before slicing and serving.
