Prepare the Batter:

  1. In a jug, blend together the ripe bananas, eggs, and olive oil using a hand blender until you achieve a smooth consistency.
  2. Pour the banana mixture into a large bowl. Gradually add the wholemeal flour and baking powder, stirring until all the ingredients are combined and the batter is thick and smooth.

Bake the Cake:

  1. Preheat your oven to 170°C (338°F).
  2. Grease a loaf tin (450g capacity) with butter or line it with parchment paper for easy removal.
  3. Pour the banana batter into the prepared tin and bake in the preheated oven for 40 minutes. To check if the cake is baked through, insert a toothpick into the center. If it comes out clean, the cake is done.
  4. Remove from the oven and allow the cake to cool in the tin for a few minutes before transferring it to a wire rack to cool completely.

Glaze the Cake:

  1. Melt the white chocolate over a double boiler or in the microwave, ensuring it reaches 29°C (84°F) for the best consistency.
  2. Stir in a few drops of caramel flavoring, then add yellow liposoluble food coloring to achieve a warm caramel tone.
  3. Place the cooled cake on a wire rack with a tray underneath, and carefully pour the melted white chocolate glaze over the entire cake, ensuring it drips down the sides.
  4. Let the glaze set completely before slicing and serving.
