Chocolate Sponge Gluten-Free
  • 100 g dark chocolate
  • 75 g unsalted butter
  • 65 g egg yolks
  • 160 g egg whites
  • 60 g caster sugar
  • Marquise Chocolate Mousse
  • 390 g whipping cream
  • 4 g gelatine leaves
  • 180 g milk
  • 240 g dark chocolate
  • Chocolate glaze
  • 100 g milk
  • 30 g caster sugar
  • 180 g dark chocolate
  • Chocolate Whipping cream
  • 20 g honey
  • 50 g Whipping cream
  • 80 g Dark chocolate
  • 200 g whipping cream
Instructions
    Chocolate Sponge:

    Melt the dark chocolate and unsalted butter separate, than combine and mix until well combined.

    Stir in the egg yolks until the mixture is smooth.

    Whip the egg whites with caster sugar until stiff peaks form.

    Gently fold the meringue into the chocolate mixture in three additions, ensuring it's fully incorporated without deflating the meringue.

    Pour the batter into a 19x28 cm cake tray and bake at 180°C for 12 minutes. Allow the sponge to cool completely.

    Semi-whip the 390g of whipping cream until it has the consistency of melted ice cream. Place it in the fridge for later use.

    Bring the milk to a simmer and add the hydrated gelatine, stirring until dissolved.
