Chocolate Sponge:

  1. Melt the dark chocolate and unsalted butter separate, than combine and mix until well combined.
  2. Stir in the egg yolks until the mixture is smooth.
  3. Whip the egg whites with caster sugar until stiff peaks form.
  4. Gently fold the meringue into the chocolate mixture in three additions, ensuring it's fully incorporated without deflating the meringue.
  5. Pour the batter into a 19x28 cm cake tray and bake at 180°C for 12 minutes. Allow the sponge to cool completely.

Marquise Chocolate Mousse:

  1. Semi-whip the 390g of whipping cream until it has the consistency of melted ice cream. Place it in the fridge for later use.
  2. Bring the milk to a simmer and add the hydrated gelatine, stirring until dissolved.
  3. Melt the Chocolate: Pour the hot milk over the dark chocolate and stir until the mixture is smooth.
  4. Carefully fold the chilled semi-whipped cream into the chocolate mixture in two batches until fully incorporated.
  5. Pour the chocolate mousse over the cooled chocolate sponge and refrigerate for about 2 hours until set.

Chocolate Glaze:

  1. Make the Glaze: In a small pot, bring the milk and caster sugar to a simmer.
  2. Pour the hot mixture over the dark chocolate and stir until the glaze is smooth and shiny.
  3. Once the mousse has set, pour the glaze over the cake and return it to the fridge to set.

Chocolate Whipped Cream Topping:

  1. Bring 50g of cream and honey to a simmer, then pour it over the dark chocolate. Whisk until the mixture is glossy and smooth.
  2. Gradually whisk in 200g of whipping cream until fully combined.
  3. Allow the mixture to chill in the fridge for about an hour.
  4. Remove the cake from the frame and trim it to your desired size. Decorate the cake with the chocolate whipped cream topping as desired.
  5. Your Gluten-Free Chocolate Mousse Cake is now ready to be served! Enjoy this rich, indulgent dessert!
