  1. In a mixing bowl, whisk together egg yolks, whole egg, and caster sugar until pale and smooth.

  2. Heat milk, double cream, and vanilla over medium heat until simmering, then slowly whisk into the egg mixture to temper the eggs.
  3. Pour the mixture back into the saucepan, cook over medium heat until it thickens and curdles (Overcooks). Transfer to jug and blend with a hand blender until smooth.
  4. Pour the custard into ramekins or lined mould (see example in the video), refrigerate for 3-4 hours.

Chocolate Sauce

  1. For the chocolate sauce, melt dark chocolate with heated whipping cream, stirring until smooth.
  2. Remove the crème brulle from the mold if using and Sprinkle sugar over the set custard, caramelize with a kitchen torch.

    Garnish with fresh fruits and chocolate sauce.

Notes

  1. For a deeper flavour, use a fresh vanilla pod instead of an extract. Store in the fridge for up to three days, but caramelize the sugar right before serving for the best texture. Substitute the chocolate sauce with caramel for a different twist.
