Prepare the Chocolate and Vanilla Cream:

  1. In a medium bowl, whisk together the egg yolks and caster sugar until smooth. Add the flour and mix until fully combined.
  2. In a pot, bring the milk and vanilla to a boil. Slowly pour half of the hot milk into the yolk mixture to temper it, stirring constantly.
  3. Return the tempered mixture to the pot with the remaining milk and cook over medium heat, stirring continuously, until thickened (about 5 minutes).
  4. Remove from heat and divide the mixture evenly into two parts:

For the vanilla cream:

  1. Cover one portion with plastic wrap, ensuring it touches the surface of the cream, and refrigerate.

For the chocolate cream:

  1. Add the dark chocolate to the other portion while the cream is still hot and stir until fully melted. Cover with plastic wrap and refrigerate.

Prepare the Tart Base:

  1. Follow the tart base recipe (link to tart base).

  2. For the heart tart case, grease a heart-shaped cake ring of 8 inch with butter.

  3. Roll out the cocoa and plain dough (or just one colour, if preferred).
  4. Cut strips of each dough and arrange them side by side. Gently roll them together to create a two-tone pattern.
  5. Line the heart-shaped ring with the patterned dough, using any remaining dough to cover the base.
  6. Freeze for 30 minutes.
  7. Preheat the oven to 175°C (fan-assisted) and bake the tart shell for 15 minutes. Let it cool completely.

Fill the Tart:

  1. Once the tart shell is cool, alternate spooning the vanilla cream and chocolate cream into the shell.
  2. Sprinkle dark chocolate shavings between the layers of cream.

Chocolate Decoration:

  1. Temper the dark chocolate (55%) and spread it thinly onto a floral-patterned chocolate transfer sheet.
  2. Let the chocolate semi-set, then cut it using the same heart-shaped ring. Cut a small circle out of the side of the chocolate heart to make space for the sugar flower decoration.
  3. Place the chocolate heart on top of the tart and position the sugar flower in the cut-out circle.

Storage: Store the tart in the refrigerator for up to 2-3 days. The chocolate decorations should be added just before serving for the best appearance.
