Prepare the Peanut Biscuit Base:

  1. Preheat your oven to 160°C (320°F).
  2. In a large bowl, combine the plain flour, brown sugar, crushed peanuts, and melted butter.
  3. Mix until the ingredients form a biscuit dough.
  4. Spread the dough evenly into a 19x28 cm baking tray, pressing it down to form a flat layer.
  5. Bake in the preheated oven for 15 minutes until lightly golden. Remove from the oven and allow it to cool completely.

Make the Caramel:

  1. In a saucepan, heat the caster sugar over medium heat until it melts and turns a golden-brown color, creating a dry caramel.
  2. Carefully double cream to the caramel, stirring constantly.
  3. Continue cooking the mixture until it reaches 115°C (239°F) on a candy thermometer, thickening into a smooth caramel.
  4. Remove the saucepan from the heat and stir in the unsalted butter and vanilla flavoring until fully combined.

Assemble the Bars:

  1. Pour the hot caramel over the cooled biscuit base, spreading it evenly.
  2. Place the tray in the refrigerator for about 1 hour to allow the caramel to set.

Add the Peanut Topping:

  1. Once the caramel is set, sprinkle the salted peanuts evenly over the top.
  2. Gently press the peanuts into the caramel to ensure they adhere.

Finish and Serve:

  1. Allow the bars to cool completely until the caramel hardens.
  2. Once set, trim the edges and cut the caramel peanut bars into your desired portions.
  3. Dip each bar into melted milk chocolate, covering them partially or fully, as you prefer.
  4. Allow the chocolate to set before serving.
